You're on the right track, but you should use your real height and run the setup sitting down. When the sensors scan you while standing in in the middle of your play space, it uses the height it sees your headset at, and subtracts your stated height to set the floor position.

I play standing up when I want to explore the VR space but when I play for longer stretches sitting down is more relaxing.

You can reconfigure the settings to pretend that you are roughly 5'6" to 6'4" from the floor and set up tracking from the height of you in your chair.
